Storage
Remove carrot greens as soon as possible to keep roots crisp. Store carrots in a container of water in the fridge.
Preparation
Carrots can be eaten raw or cooked. The greens as also edible and can be used in recipes such as Carrot Top Pesto. Dark purple carrots will bleed colour during cooking, so you may want to cook separately to keep the other vegetables from turning purple.

Varieties
RAINBOW CARROTS
A mixture of many shades of white, yellow, orange, red, and purple carrots that have flavours ranging from very sweet to slightly spicy (like a slight radish flavour).
PARIS MARKET CARROTS
An heirloom mini carrot variety that originates from France. The teeny, ball-shaped carrots are exceptionally sweet, but do not keep as well as some other carrot varieties. The greens were removed immediately after picking to prevent moisture loss from the root.
OXHEART CARROT
A French heirloom storage carrot. Large, heart-shaped roots can grow up to 1 lb each, but stay sweet and never woody.
