CAULIFLOWER

Storage

Sprinkle cauliflower with water and wrap loosely in a damp paper towel, bag, or partially open container.  You may want to store sprouting cauliflower stems in water (in the same way you would keep fresh flowers).

Preparation

Cauliflower can be eaten raw or cooked.  Purple cauliflower will lose its colour when cooked.

SPROUTING CAULIFLOWER

Fioretta is a new cauliflower variety grows mini florets on long stalks.  It is exceptionally sweet and tender.  

ROMANESCO

Romanesco is sometimes called a broccoli, but it's texture & flavour is more closely related to cauliflower.

Romanesco originated from Italy.  It has bright green fractal heads with a delicate, nutty flavour.

PURPLE OF SICILY

A purple Italian heirloom cabbage.  The heads turn bright green when cooked.
