
FAVA BEAN RECIPES
Lemon Garlic Favas
Ingredients

1 bag favas
​
2 Tbsp oil
​
4 cloves garlic
​
2-3 Tbsp lemon juice
​
1-2 onion greens, chopped
​
Salt & pepper to taste
​
Directions
​
Remove favas from pods. You can remove the outer skin of the individual beans, but I always leave it on. It is easier to remove the outer skin after they have been boiled.
​
Bring a medium pot of water to a boil. Cook the favas for 2-3 minutes, then either rinse with cold water or dunk in an ice water bath.
​
Heat oil over medium heat. Add garlic and cook for about 1-2 minutes. Add the beans and cook for an additional five minutes.
​
Remove from the heat, add lemon juice, top with onion greens and season with salt and pepper as desired.

Favas and Snap Peas with Proscuitto
Ingredients

1 bag favas
​
1/2 cup snap peas, chopped
​
1/2 cup proscuitto, minced
​
2 Tbsp oil
​
3 cloves garlic
​
2 Tbsp balsamic vinegar
​
Salt & pepper to taste
​
Directions
​
Remove favas from pods. You can remove the outer skin of the individual beans, but I always leave it on.
​
Bring a medium pot of water to a boil. Cook the favas for 2-3 minutes, then either rinse with cold water or dunk in an ice water bath. Set beans aside.
​
Heat oil over medium heat. Add the prosciutto and cook for 1-2 minutes. Add the garlic and cook for another 1-2 minutes or just until the prosciutto is starting to brown.
​
Add the favas, season with salt & pepper as desired and cook for about 2-3 minutes. Remove from the heat and add the vinegar.
​
Add the snap peas and serve.
