Chicken Tzatziki Pita Salad
Garlic, salt & pepper to taste
Season chicken (we usually use chicken breasts) with garlic, salt & pepper to taste. BBQ or roast the chicken.
While the chicken is cooking, cut up vegetables, pitas, feta and olives into salad-sized bites.
Once chicken has cooled somewhat, slice into salad-sized bites. Mix all ingredients together and serve.
Roasted Cucumber Sandwiches
2 lbs cucumbers
2 Tbsp butter, melted
1 1/2 cups Greek yogurt
4 cloves garlic, divided
2 Tbsp fresh mint, chopped
1 Tbsp lemon juice
Ciabatta or focaccia buns
Preheat oven to 400 degrees F.
Wash and cut cucumber in half. Remove any large seeds. Place cucumbers, cut-side-down on a parchment paper-lined baking sheet. Brush cucumbers with melted butter and season with salt and pepper to taste. Roast until tender (about 15 minutes).
While cucumbers are roasting mix yogurt, 2 gloves garlic (crushed), mint & lemon juice together in a medium bowl.
Once cucumbers have cooled somewhat, chop into pieces and add to the yogurt mixture.
Brush cut sides of buns with oil and "sprinkle" with the other 2 cloves of crushed garlic. Toast the buns in the oven for 3-5 minutes or until lightly browned.
Spoon cucumber and yogurt mixture onto the buns and serve.
