Garlic Parmesan Roasted Rainbow Carrots
1 bunch carrots, washed and chopped
1/4 cup oil
5 cloves garlic
1/4 cup grated parmesan cheese
4 Tbsp panko breadcrumbs
Salt & pepper to taste
Chopped carrot greens (optional)
Preheat oven to 400 degrees F or heat BBQ to high.
Place carrots, oil, garlic, parmesan, and breadcrumbs in a bowl and toss until carrots are evenly coated. Season with salt and pepper to taste.
Place the carrots on a baking sheet or a few layers of foil. Cook for 20-25 minutes, or until carrots are tender. Flip carrots at least once during cooking.
Remove from the heat. Top with chopped carrot greens if desired and serve.
