Apple and Kohlrabi Salad


1 large kohlrabi, peeled and thinly sliced

2-3 apples, thinly sliced

1-2 cup grapes, halved

2 Tbsp lemon juice

1/4 cup Pecorino or Parmesan cheese, grated

2 Tbsp oil

1 Tbsp white wine vinegar

Salt & pepper to taste


Place the kohlrabi slices in a bowl.  Drizzle with 1 Tbsp of lemon juice and season with salt and pepper.  Mix to coat and set aside for 10-15 minutes.

Mix 1 Tbsp of lemon juice with the apple slices.

Mix all ingredients together and toss gently.

Garlic and Parmesan Roasted Kohlrabi 


1-2 kohlrabi

2 Tbsp oil

3 Cloves garlic

3 Tbsp Parmesan cheese

Salt & Pepper to taste


Preheat the oven to 450 degrees F


Remove outer peel from kohlrabi and cut into wedges.  Toss with oil, garlic, salt & pepper.

Roast in the oven for about 30 minutes, stirring every 10 minutes or so.

Remove from the oven when kohlrabi is tender.  Toss with Paremsan cheese and serve.
