
KALE RECIPES
Roasted Kale Sprouts with Balsamic and Honey
Ingredients

1 bag kale sprouts
​
Oil
​
4 cloves garlic, crushed
​
Salt & pepper to taste
​
2 Tbsp balsamic vinegar
​
2 Tbsp honey
Directions
​
Preheat oven to 400 degrees F.
​
Trim kale sprout stems and remove any yellow leaves as needed.
​
In a large bowl, toss kale sprouts in 2 Tbsp oil. Season with salt, pepper & garlic.
​
Place kale sprouts in baking dish and roast until tender - about 10-15 minutes (keep an eye on smaller sprouts to prevent burning).
​
Place the sprouts back in the bowl, add 1 Tbsp oil, vinegar and honey. Toss to coat and serve.

Kale and Apple Salad with Saskatoons
Ingredients
​
For the salad:
4 cups kale, chopped
​
2 cups apples, chopped
​
2 cups fava or pea shoots
​
1 cup saskatoons
​
1/2 cup crumbled feta or goat cheese
​
2 Tbsp sunflower seeds
​
​
​
For the dressing:
1/2 cup saskatoons
​
3 Tbsp oil
​
2 Tbsp lemon juice
​
1 tsp honey
​
1 tsp balsamic vinegar
​
2 Tbsp water
​
Salt & pepper to taste
​

Directions
​
In a large bowl combine kale, apples, 1 cup saskatoons, shoots, cheese & sunflower seeds.
​
Mash 1/2 cup saskatoons and whisk with the remainder of the dressing ingredients.
​
Add dressing to salad and serve.
