
SASKATOON RECIPES
Saskatoon, Feta & Quinoa Salad
Ingredients

2 cups water
​
1 cup quinoa
​
1/4 cup mint leaves, chopped
​
1/3 cup oil
​
1 1/2 Tbsp fresh lemon juice
​
1 cup saskatoons
​
1/2 cup feta
​
Fava shoots, pea shoots, or lettuce
​
Salt & pepper to taste

Directions
​
Combine water, quinoa, & salt (if desired) and bring to boil. Reduce heat to a simmer and cook until all water is absorbed, about 15 - 20 minutes. Remove quinoa from the heat and let sit covered for 10 minutes. Fluff quinoa with a fork and let cool.

Combine mint, oil, lemon juice, salt & pepper. Add dressing, saskatoons, greens and feta to the quinoa and combine.

Saskatoon Grilled Cheese
Ingredients
​
1 cup saskatoons
​
2 Tbsp balsamic vinegar
​
3 Tbsp brown sugar
​
4 slices bread
​
Brie, mascarpone, or goat cheese
​
Fava or pea shoots (optional)
​
Butter or margarine
​
​
Directions
​
Heat blueberries, vinegar & brown sugar over medium heat for 5 - 7 minutes. Remove from heat. Strain off excess liquid and set aside.
​
Butter one side of each piece of bread. Spread cheese over bread, top with saskatoons & shoots.
​
Cook in a pan over medium heat until bread is browned and cheese has melted.
